The Falcon Hotel, Castle Ashby, Northampton
Set on the edge of a small village green, surrounded by fields, The Falcon is a former 16th-century coaching inn which was latterly a Greene King pub until it was taken over by local couple, Spencer Compton - the 7th Marquess of Northampton, who grew up on the Castle Ashby estate that encompasses the village - and his wife Tracey. It's been transformed into a subtly tasteful, stylish hostelry, with eight bedrooms in the main building, and several small cottages close by. The flagstones lining the floor of the reception area and beyond are original, and dotted with coffee tables, generously upholstered furniture, sculptural artworks and burnished mirrors. The hotel offers a range of wellness experiences - overseen and co-ordinated by Tracy, a psychotherapist - from open-water swimming to yoga classes and guided meditation. A newly-built extension houses a bar and lounge, and the main restaurant, Eyas, features dishes made with ingredients sourced from the estate.

Location
The Castle Ashby gardens are exquisite, and feature a small menagerie of animals including some adorable, and entertaining, meerkats.
The hotel is in the sleepy village of Castle Ashby, surrounded by countryside and 20 minutes' from Northampton for shops and restaurants.
By car: The Falcon is around 2 hours from London, just over an hour from Birmingham and 3 hours from Manchester. There is free parking available on-site.

We love the relaxed, informal ambience; the restaurants are popular with locals as well as guests. Venison reared on the Castle Ashby Estate, served with swede, juniper and pickled black walnut, is a standout dish.
